Ellington is a lovely, ash-coated pyramid of immaculate white paste wrapped in a pencil-thick line of ash just under a velvety rind. At the peak of ripeness, this semi-soft goat's milk cheese develops a luscious, creamy layer around its center paste. Ellington won 2nd place at the 2012 American Cheese Society Conference and a Cooking Light Taste Test award in 2011.
