Our Cheese
 
We make five types of cheeses regularly and a few extras for the market season.  Our regular production includes fresh Chevre, Feta, two semi-soft, aged cheeses (Ellington & Pack Square) and a hard aged cow milk cheese (Chocolate Lab).  Our regular cheeses are available at the market, many retail outlets, and some restaurants in Western North Carolina and beyond.   
Our chevre is creamy and light with a slightly acidic profile and a clean taste of fresh goat’s milk.  The regular flavors available year round are Garlic & Dill, Chipotle, Ginger, and Plain.  We also offer seasonal favorites like Cranberry Walnut during November and December along with a few other options throughout the year. 
Ellington and Pack Square are semi-soft, bloomy rind varieties of aged cheese.  These are both delicate cheeses that ripen over a period of 3 to 4 weeks.  They reach peak flavor when they are 6 to 8 weeks old.  The curds are cut and drained into molds, hand salted, and turned every day as they age and develop a velvety rind. 
Pack Square is a brie style cheese in a square format.  It draws its name from two sources, the Pack Family Dairy where the milk comes from and Pack Square, a well-loved park in the heart of Asheville.  This cheese has a warm, buttery flavor that draws from the rich, grass fed Jersey milk from which it is made.  
Ellington is a beautiful pyramid of goat’s milk. Cooking Light named this cheese in their 2011 Taste Test Awards as some of the best around. The interior is immaculate white wrapped in a pencil thin layer of ash that is coated in a velvety white rind. 
Our hard, aged cow’s milk cheese is called Chocolate Lab.  It has a firm but not dry interior with a distinctively ridged rind that develops a dusty red color as it is washed in a brine solution over time.  The final step of the process is to hand rub each wheel with crushed cocoa nibs from Black Mountain Chocolate blended with Blue Moon spring water.  The name for the cheese comes from its friendly nature (with just a little bit of a bite) and it's warm chocolate coating.  Its hard not to love a Lab!  
All of our cheeses are made by hand in small batches.  They are carefully taken care of as they age at proper temperature and humidity levels.  We hand salt most of our cheeses and turn them daily as they develop.  We take great care of our cheeses from beginning to end to deliver a quality and distinctive local product to our customers.
